I guess today is the very first time that I publish something in written English... so please be forgiving and focus on the delicious candies instead of my writing :)
The recipe is for Olga, who flew in from Edinburgh for a much appreciated but far too short visit in January.

Hazelnut-Chocolate-Candy
Ingredients:
200g hazelnut wafer cookies
400g hazelnuts
400g chocolate hazelnut spread (Try not to use nutella! Search for a variety with more hazelnut and chocolate and less sugar/oil. We used a brand with 45% hazelnuts... nutella has 13%...)
200-300g semisweet chocolate for coating
2-3 tbsp. neutral oil to smoothen the coating (optional)
Prepare the hazelnuts by toasting them for 10-15 min. at 200°C. Skin the nuts. Reserve around 40-60 whole hazelnuts for the center. Chop the rest finely (about 2mm pieces). This can be done in a food processor.
Crush the wafers. Reserve some of the crushed wafers and some of the chopped hazelnuts, for coating the pralines. Mix the remainder in a big bowl together with the chocolate hazelnut spread (tip: if the spread is too hard to be scooped easily, microwave it for 5 seconds).
Put the mixture in the fridge and let chill for at least 30 minutes. Place the reserved nuts and wafer crumbles on a plate or flat dish.
Scoop out teaspoon sized portions, push a whole toasted nut in the center and form to a ball. Roll the ball in the crumble mixture until it is coated. Refrigerate.
In the meantime, melt the chocolate (together with the oil if you use it) in a bain-marie or in the microwave. Coat the hazelnut pralines with the melted chocolate and let cool on a wire rack making sure not to waste the dripping chocolate ;).
